Yesterday Dorothea asked for raspberry recipes, and it just so happens that I’ve made a couple of raspberry pies or tarts in the last few days. Unfortunately, the recipes I used are in cookbooks, so all I can do is share references rather than the full recipes themselves.
The first recipe I used was for a raspberry tart,
from a new cookbook called The Berry Bible. The other, which I made today, was a raspberry pie
from the Joy of Cooking. Both of them are very good, but I think I prefer the Joy of Cooking recipe.
Of course, it’s essential to start out with good berries. That’s why the pies turned out so well today, even though I added half as much sugar as the recipe called for. Well, actually I added the right amount of sugar; it’s just that I thought I had 6 cups instead of 6 pints of raspberries, and when I realized that and decided to make two pies instead of one, I forgot about the sugar and cornstarch. (Don’t ask me how I mistook pints for cups; it was a long day. I just sort of assumed they were cup-sized baskets, didn’t turn my brain on, and didn’t bother to read the box until too late.)
I would include a ravishingly lovely photo of my pies if I had one. I took pictures, but they’ll have to wait for me to finish the roll and develop it. And then I don’t even have a scanner! If my digital camera comes before we cut the second pie, I’ll take a photo and stick it up so you can all drool.

Here we either buy them by the punnet (a lose measure of the "look, I'm selling you this many berries" variety) or by the pound/kilogram.

We got a flat of them, and the flat was partitioned into pint-sized cardboard boxes. It might very well have been by coincidence that they were pints, either that or design on the part of the box manufacturer and not the berry farmer/grocer.
Anyway, the most amazing thing was watching her serve the pie last night. All the pieces came out of the pan in perfect wedges, I don't think any of the filling dripped anywhere, and the crust didn't crack at all. It was amazing.

As for serving pie, yes, it was quite amazing. On the other hand, the cream absolutely refused to whip.
